Spring Kumquat & Fennel Salad

What do you make with Kumquats? It's a common question! These little edible ovals can be used for more than just jam. 

This fresh Kumquat, Fennel & Date Salad is refreshing, delicious and an overall treat! 

INGREDIENTS 

SALAD
- Fennel, thinly sliced 
- Radish (1-2) thinly sliced
- 1 green onion
- 2 dates, chopped
- Kumquats, thinly sliced
- Mint
- Fennel tops
Tip: Use a mandoline (if you have one) to get the kumquats, radishes & fennel thinly sliced. 
DRESSING
- 1/2 lemon or Apple Cider Vinegar
- Olive oil
- Salt & pepper
Tip: Dressing is to taste!
